Method of preparation:

I have tried several Raffaello candy recipes in the past. The one with mascarpone did not look at all like the original, the balls being soft, moist and too creamy. The one with condensed milk seemed heavy, slightly nauseous, extremely sweet, or butter rubbed with sugar, especially if it's made cold, it seemed to me the worst option of all. So is the one with melted white chocolate, which is extremely sweet. If we added pieces of broken wafer in the composition, they just softened, became rubberized and led to the disintegration of Raffaello balls.

About the filling: I decided to go for the original version, that is, whole almonds scalded and peeled from the brown skin. For 2 minutes of work it is not worth putting the peeled almonds.

From my previous experiments, my recipe was born, which, of all the variants, I like the most. I went for the idea homemade chocolate with milk powder, that stick loved since childhood.

Put the biscuits through the food processor or through the mincer.

If you do not have any of these devices, break the biscuits into pieces, put them in a bag and crush them with a rolling pin.

Pour the ground biscuits into a large bowl.

Bananas must be well cooked to use in this recipe.

Peel a squash, grate it and put it on a flat plate. With a fork, start passing them from one end to the other, one at a time.

Pass them until they become puree. If you want to feel their more accentuated taste in balls, you can also leave a few whole pieces.

When you feel like something sweet, fast, but especially fasting, a portion of Swedish candies (or bombs, as they are also called), rolled in coconut, can get you out of the impasse. They are easy to make, suitable for any occasion and you can replace or add other ingredients you like.

For example, you can replace oatmeal with crushed biscuits. You can give up sugar and add honey or natural sweeteners if you want to turn them into a very suitable dessert for children.

  • 200 g of oatmeal
  • 100 g brown sugar
  • 2 teaspoons cocoa
  • a pinch of salt
  • 130 ml coconut butter
  • 2 teaspoons coffee (espresso)
  • coconut flakes for decoration

Put the dry ingredients in a food processor and mix until they are crushed and homogenized.

Put everything in a large bowl and pour the melted coconut butter over and the 2 teaspoons of coffee. Mix everything well with a spatula, then by hand, to homogenize as well as possible and see the consistency.

It is good to pour the coconut oil gradually, to make sure that the composition does not come out too soft. In this case, you will have to thicken it with oatmeal or a few chopped biscuits.

Knead the candies by hand and roll them in coconut. Leave the candies for at least two hours before serving, so that the flavors combine and the oatmeal softens.
