Dessert cake with yogurt and tropical fruits


Turn on the oven to heat.

Separate the egg whites from the yolks.

Whisk the egg whites with a pinch of salt, then mix with the sugar until they become like a meringue. Add the yolks and vanilla essence and mix well. Incorporate the flour, mixing gently, from bottom to top, with a silicone spatula. The composition is poured into a removable tray greased with oil and lined with baking paper and placed in the oven until it passes the toothpick test. Remove the top from the oven and let it cool for five minutes. With the help of a knife, detach the edges of the tray and remove the detachable ring. Place the top upside down on a grill for cooling or on a baking paper, and place a weight over the tray to press. Allow to cool completely before cutting.

Filling + decoration:

Put a saucepan of water on the fire.

Put the gelatin in a bowl and pour 100 ml of cold water over it.

Mix 400 ml of whipped cream. Add the yogurt, cheese, sugar and vanilla powdered sugar over it and mix well.

Put the bowl of gelatin in the hot water from the pan and keep it there until it becomes liquid.

Liquid gelatin is mixed with cream.

The tropical fruits are drained of juice and left a few aside for decoration. The rest of the fruit is incorporated into the cream.


Cut the worktop in half.

Place a sheet on a plate and place the removable ring from the tray around it. Syrup the leaf with tropical fruit juice (it can be mixed with pineapple juice).

Put the pineapple slices around the detachable ring, then pour the cream and level.

Syrup the second sheet of countertop and place it over the cream and over the pineapple slices.

Let the cake cool for 4-5 hours or it is best left overnight.

After that, remove the ring from the removable tray on the cake, and the top is decorated with the rest of the whipped cream and the rest of the tropical fruits.
