Pie with sweet cheese and raisins

Mix in a bowl ... warm water with oil, the 3 tablespoons of sugar, salt and then dissolve the yeast. Leave to rise for 10-15 minutes, add flour and obtain a good and non-sticky dough. Let it rise again for 15 minutes. Divide the side into two.

We make the cheese composition, mixing the cheese, sour cream with egg, then with sugar, raisins, orange peel and vanilla.

Spread the sheet (I spread directly on the baking sheet), then put half of the composition of cheese and raisins. Roll lightly and place in the pan with the baking sheet. We do the same with the second sheet.

Put the second pie in the pan and grease with the beaten egg yolk.

Bake for almost an hour (at 180 degrees). We check that it is browned and baked inside.

We serve with great appetite and pleasure .... it's delicious!


Ingredients Sweet Cheese Pie:

  • 450 grams of flour 000 (for cakes, cakes)
  • 80-90 grams of flour 550 or 650 (for bread)
  • 14 tablespoons oil
  • 2 whole eggs
  • 10 grams of fresh yeast
  • 1 tablespoon grated sugar
  • 1 tablespoon milk
  • 50-60 ml. yogurt (or sana, kefir)
  • 1 pinch of salt
  • 800 grams of well-squeezed cow's milk
  • 3 large or 4 smaller eggs (for the filling)
  • 2 tablespoons semolina
  • 150 grams of raisins
  • sugar to taste (how sweet you like the filling)
  • 1 tablespoon vanilla essence
  • optional, grated lemon or cinnamon peel
  • 1 egg yolk
  • powdered sugar (for finishing)
  • in addition: a few tablespoons of bread flour to sprinkle the worktop

Preparation of sweet cheese pie:

Mix the yeast with the sugar and dissolve with 1 tablespoon of warm milk. Cake flour (450 grams) is mixed with salt, add 7 tablespoons of oil, the two whole eggs and yeast mixed with milk:

Mix well, then add a tablespoon of yogurt, kneading constantly, until a homogeneous, non-sticky and elastic dough is obtained (depending on the quality of the flour, more or less yogurt may be needed). The well-kneaded dough is placed on the work surface sprinkled with bread flour:

It is preferable to use bread flour to sprinkle the work surface because it has a larger granulation than the fine one, for cakes, the dough will not absorb excess flour, making it heavier.

Separately, the bread flour (80-90 grams) is mixed with the remaining 7 tablespoons of oil, forming a paste. The dough is spread on the work surface, using a rolling pin, in a sheet of about half a cm. thickness, which is greased with flour and oil paste:

Roll the dough tightly, cover it lightly with cling film and leave it at kitchen temperature for about 10 minutes, to rest:

During this time, prepare the filling, mixing all the specific ingredients. After the rest time has passed, the dough roll is cut in two and a thin sheet the size of the tray is spread on each side (I used a tray of 38 & # 21535 cm.):

Using the rolling pin, transfer the sheet to the tray lined with baking paper. Place the filling on top and level:

Cover with the second sheet. In order to be able to cut the pie more nicely, I cut the top sheet into squares as raw as possible (after that I found that it would not have been necessary, the pie is cut very easily, without spreading the sheets) then I finished the dough by gently greasing with the beaten egg yolk brush with 2 teaspoons of cold water.

Put the pie in the preheated oven at 200 degrees Celsius, after 10 minutes reducing the heat to 180 degrees Celsius. In total, the pie is baked for about 35-40 minutes, until it browns nicely (it also depends on the oven).

The tray with the hot pie, as soon as it is taken out of the oven, is covered with a kitchen towel and left to cool for about 20-30 minutes. Then it is powdered with powdered sugar and is perfect to eat:


The pie is very tasty, with a dough that unfolds into sheets and a certain rustic consistency. I'm sure you won't resist trying it!

Cheese pie

The cheese pie may not be the most creamy and sweet dessert, but it is definitely much better and healthier and I give it with more confidence to children, grandparents and all those who step on my doorstep. I also send it in a package, with great pleasure.

Tell you how I made this cheese dessert?

  • For the filling
  • 7-800 g of cottage cheese
  • 2 eggs
  • 70 g butter
  • vanilla sugar
  • 2 tablespoons flour
  • raisins
  • esenta de rom
  • a little salt
  • sugar to taste (this time I didn't put much, I try to reduce it as much as I can)
  • For sheets
  • 7 tablespoons milk
  • 7 tablespoons oil
  • 6 tablespoons sugar
  • an egg
  • a teaspoon of baking soda
  • a tablespoon of oil
  • 350-400 g flour
  • In addition: breadcrumbs

Preparation Pie with cheese

How simple it is!
Mix all the ingredients for the filling.
Melt the butter and cool.

Mix well, mix well and add the raisins.

Set aside the bowl and prepare the dough for the pie sheets.

Put the milk with the oil and sugar in a kettle, on the fire.

Bring to the boil then turn off the heat.

Put in a bowl the liquid obtained, the baking soda quenched with vinegar and egg. Gradually add the flour, mix first with a spoon and then knead by hand.

Flour is added depending on the absorption power. The dough must be elastic, not stick to hands and can be stretched into sheets.

Divide it into 2 equal bile. Grease the tray (20/28 cm) with a little oil and spread a sheet of a ball of dough on the floured worktop, the size of the tray.

Transfer it to the pan and sprinkle with breadcrumbs.

Spread the cheese filling evenly, sprinkle with breadcrumbs again and place the spread sheet of the second ball of dough on top. Press lightly.

Prick it from place to place, then put the tray in the oven, at 170-175 degrees until it browns nicely & # 8211 I baked it in the electric oven, the ventilation program, at 155 degrees on stage 2.

Cover it with a clean napkin. The cheesecake is warm, so now you can powder it with powdered sugar.

How to make sweet cheese pie with cows and raisins?

How to build pie sheets?

I bought the pie sheets but you can also make them at home (recipe here). We are talking about thin sheets for strudel not the puff pastry type (as for cremeschnitte or pies).

We work on the kitchen table. Place the first sheet on a baking sheet (it will help us later), brush with melted butter, sprinkle lightly with grated lemon peel. Optionally you can add a little sugar (half a teaspoon grated to a sheet). I also added sugar because it caramelizes easily and gives a special flavor to the leaves. Then place the next sheet and repeat the procedure until I overlapped 4 sheets.

Because I chose a round tart shape of 26 (and at least 5 cm high), I placed the staggered sheets on top of each other. If you use a square or rectangular shape (about 20 & # 21525) place the sheets on top of each other. As you can see again, I found some terrible, dry and broken sheets. But don't worry, at least I'll show you how to work with broken sheets, as you've probably suffered.

With the help of baking paper, lift the sheets, place them in the shape and press lightly with your fingers to reach the lower edge of the form.

How to prepare cream cheese for cheese pie?

For the cream cheese, separate the egg whites and beat them with a pinch of salt until a hard foam is formed. Then add the sugar and continue beating the foam until it becomes firm, dense. Then add (also with the mixer) the yolks. Then mix with a palette of grated lemon peel (I have lemon zest in a jar) and starch, finally add the cheese and incorporate everything with the palette so as not to crush the egg whites. If you find too much sugar you can put less (70-80 g).

Cow's cheese should be a fat one, well drained of whey, preferably bought from the market, from producers.
