- 200g brown lentils
- 100g pearl barley
- 1 chopped carrot
- 2 chopped sticks of celery
- 1 chopped onion
- 100g chopped cabbage
- 1 cube of frozen spinach
- 6 cloves minced garlic
- 450g cubed pork
- 1 bay leaf
- 1/2 tsp dried oregano
- 1/4 tsp thyme
- 750ml chicken stock
- 750ml - 1L water
- 400g tin chopped tomatoes
- 2 tbsp tomato puree
- salt/pepper to taste
- To serve
- 1 tbsp apple cider vinegar per serving (optional)
- Grated parmesan cheese (optional)

- Submerge lentils under water to remove impurities that will rise to the surface, rinse and drain.
- Add lentils to the slow cooker with all the other ingredients in the order listed. Stir and cook on high for 6-7 hours. If necessary, add 250 to 500ml of extra water to achieve desired consistency.
- Remove the bay leaf before serving. It may sound strange but mixing a tablespoon of apple cider vinegar through your soup gives it a tangy zing! Alternatively you could simply top it with grated parmesan cheese.

2016 UPDATE - just made this soup again and this time I fried the onions, celery, meat and garlic etc for about 5 minutes to soften and it made a HUGE difference in getting the taste into it. And I would fry again next time. The cider vinegar suggestion helps as does the Parmesan cheese.So this time I give it 4 stars and would highly advise anyone to makeVery easy to prepare and it was a thick warming soup, but so, so bland. I had to add huge amounts of salt and pepper and extra herbs and cider vinegar to get any taste in it. Adding a little Parmesan to each serving helped too. But once I got got the 'taste' into it, it was very nice and would consider doing again.-28 Jan 2013

Soup mix does not require soaking before use, so can be added straight into your soup liquid. And as soup mix requires just that little more time in the pot to soften to eating consistency, it is ideal for adding to the slow cooker.
What to Serve with Tomato Soup
This soup is excellent without any side dishes, but I do love having it with some fresh bread or some croutons.
You can make some fried cheese sticks to dip into the soup. The sticks are super easy to make and are perfect for dipping. They’re also relatively inexpensive to make, so they’re great if you’re on a budget.
A classic toasted sandwich is also an ideal side dish to have with this delicious soup. You can eat them separately, or you can dip the toasties into the soup for a match made in heaven.
To double up on tomato, you can always make some bruschetta to serve alongside this tomato soup. It’s a delicious side dish but does involve a bit more time preparing in the kitchen.

In a skillet, brown hamburger and drain. Add vegetables.
Combine tomato paste, Worcestershire sauce and bouillon. Add to crock pot with hamburger. Stir to blend.
Cover and cook on low for 8-10 hours or on high for 3-4 hours.

- 6 cups chicken broth
- 1 cup chopped white onion (from 1 medium onion)
- 1/2 cup chopped carrot (from 1 large carrot)
- 1 tablespoon chili powder
- 2 teaspoons finely chopped garlic (from 2 garlic cloves)
- 1 teaspoon ground cumin
- 1 (14.5-oz.) can fire-roasted diced tomatoes, undrained
- 1 teaspoon kosher salt
- Toppings: sour cream, avocado slices, fresh cilantro leaves, chopped fresh tomatoes, black pepper
Place beans, poblano, broth, onion, carrot, chili powder, garlic, and cumin in a 6- to 8-quart slow cooker. Cover and cook on LOW 7 hours. Add fire-roasted diced tomatoes and salt to slow cooker, cover, and continue cooking on LOW until thoroughly heated, about 1 hour. Serve with choice of toppings.
